Sheet pans meals and I are BFFs.

I love sheet pan meals. I see so many different kinds on my social media feeds and always save them. But you really don’t need recipes. Usually at the end of the week I go through my produce drawer and chop away at any vegetables that are starting to break up with me. I also find some kind of protein like sausage, chicken breast or even ground turkey in the freezer. I try really hard to meal plan on Sundays but let’s be realistic. My days often need to be flexible and open to change. Kids end up eating at a friend’s house or I really want to participate in a Taco Tuesday special. Anyways, by Friday I don’t want anything to go to waste. Whatever sheet pan meal I make that day we usually throw into a Saturday omelet anyways.  Today I threw on some parchment paper (I never use aluminum foil) brussel sprouts, yellow onion, red potatoes, cauliflower rice, spinach, organic chicken and garlic sausage, salt, pepper, then spray with olive oil. I set the oven at 385 and watch it for 20-25 minutes. Once  roasted, I serve it with a drizzle of balsamic reduction. Voila! Tonight’s mini meal before I indulge in a TGIF cocktail.
