Popcorn with a twist


When I was doing Whole 30, corn was one of the hardest foods I had to eliminate. I love Mexican food, cornbread and popcorn. I was happy to find out that reintroducing it back didn’t cause havoc to my body. I decided to stop making microwave popcorn and go back to basics. I now pop popcorn in coconut oil, use organic kernels and sprinkle Himalayan salt on it. The results are amazing and I feel like I don’t even need to add butter. If I do, I melt some organic ghee. Try it next time and let me know what you think! By the way, tonight I popped the popcorn in a foil packet on our Big Green Egg to add a bit of a smoky flavor.
